In the US, the chess pie is traditionally associated with the southern states, though it reportedly originated in the UK. Opinions vary about how it got its name- none seem to be verifiable. Anyway, here's a version with chocolate.
Prepare a single pie crust. I make a butter crust, but you can use a store-bought or cookie based crust. The normal pie crust does not need to be pre-baked. You can add some cocoa powder (2 tbsp) to the crust if desired.
For the filling:
7 tbsp unsweetened cocoa powder
2 cups sugar
1/4 tsp salt
4 tbsp flour
1 3/4 sticks (7/8 c) of butter (melted)
2 tbsp vanilla
5 eggs
1 tbsp corn meal
Prepare the filling and pour it into the crust
For the butter crust, I bake it a 450 degrees for 10 minutes, then turn down to 350 degrees and bake about 50 minutes or until you can insert a knife blade into the filling and have it come out clean.
