Brian Burns wrote a book about "Double Bevel Sharpening" which is fairly thorough in it treatment of forming a really sharp edge for planes and chisels. I watched as he demonstrated his process, and as a test he took shavings from birds eye maple and curly redwood you could almost read a newspaper through. In the book you learn about how cutting angle and clearance angle effect the cutting process, and how to adjust for different types of wood grain.
