what do I do with binding?

I am about to Dye my Les Paul kit ( I am disabled and can only afford a kit for now) and I was wondering what should I do to the binding? should I tape it off or just dye it too?

You can tape it off if you want to, but you will still end up having to scrape it in places. Some folks just dye the whole thing and scrape afterwards.

I have found it much easier to get a good clean job if I use vinyl striping tape and carefully mask the bindings before applying any color. It takes a lot of practice (many many instruments) to get good at cleanly scraping bindings. So, if you can do a good job of masking it really pays off, otherwise you will be scraping for a while. If you are using wood bindings all bets are off.

What about using a liquid "frisket" mask?

I suppose that would be an extra step but it might work better than masking tape to prevent bleed at the edge?
