I usually taste cedar too. Of course usually I get it second hand from my cigars.

Interesting read this thread. I have some redwood tops that are light as a feather, and yet ring for ages, and very very stiff both directions. They're almost too good to be true, and easily are better than the LS set I have. Redwood can be crazy good stuff...or really bad too.
