How about this - start with two "standard" height humbucker bobbins, cut/sand one plate off of each, reduce the height of the shafts such that they add up to the desired height when stacked, and then CA or epoxy glue the shafts together? You could use dowels to align the two halves for gluing.
Or make new taller shafts out of wood or MDF, that's a pretty common approach.

I like it! I would still like to find some that are 1/8 taller than standard out of the box. Any injection molders out there?!?!

Find a young child with a 3D printer. Would be "childs play" (pun intended) to make some for you...

Most public libraries around where I live have 3D printers (though not all of them are open right now due to the pandemic). Just upload your file and pick up your creation. Check your local library if you need a one-off.
